DARKINS CHOCOLATE FACTORY VISIT

1) Introduction : 10 minutes
Charlie talks about chocolates & interacts with the guests.
Guests share their chocolate memories/ favourites.
2) Origins : 20 minutes (Based on Availability of Cacao Pods)
Cracking open a fresh cacao pod for the guests to see/touch/smell.
Comparing fermented cocoa beans (ready for production) to raw cocoa beans obtained from fresh cacao pod.
3) The Chocolate FactoryTour : 25 minutes
Bean Storage - See, touch, smell cocoa beans from different regions of India.
Roasting - The process of roasting cocoa beans to develop their flavour profile. Comparison between roasted and unroasted beans.
Cracking/ Winnowing - Cracking open cocoa beans and separating the useful nibs from the husk/shell of the bean.
Conching and Grinding - A show of how cocoa nibs, sugar & cocoa butter are ground to make liquid chocolate.
4) Tempering & Chocolate Making : 15 minutes
Tempering : The guests get to see and understand how chocolate is tempered as a large batch of chocolate is tempered in front of them.
Chocolate Making : The tempered chocolate is then set into bars.
5) Chocolate Tasting : 30 minutes
A chocolate tasting session is carried out with 4 dark chocolates, 1 milk chocolate & 1 white chocolate.
The varied notes, intensity & flavour profiles in the chocolates are explained.
Charcuterie boards with spreads, nibbles, and fresh chocolate made by guests are served.
6) Questions & Answers : 10 minutes
A 10 minute Q&A to satiate any curiosities.
